In Ramadan, Kibda (liver) shops on the famous Qabel Street in central Jeddah's Al-Balad District serve their customers in the open, outside the shops, in a beautiful Ramadan atmosphere that continues from after Taraweeh (night prayer) until half-an-hour before Fajr (morning prayer). A shop owner, Osama Abu Zaid, 40, said, “Ramadan is an important season for us. We buy liver daily, cut it into pieces then cook it on the Saj (cooking tin) before it is served for SR10 a plate.” Abu Zaid has worked in this profession since he was 15-years-old, when he helped out at his uncle's old shop which was also quite famous then. “Our daily income is SR2,000,” he said. “However, it can go up to SR4,000 during the last 10 days of Ramadan.”
