A dietitian has warned that honey adulterated with different types of sugar raises blood-sugar levels and can be harmful to people with diabetes. Amna Malik said pure honey is 40 percent fructose and has antioxidants, which may provide protection against cancer. “Honey actually contains the same basic sugar units of table sugar,” she said. “Both contain glucose and fructose. Table sugar, or sucrose, has glucose and fructose hooked together, but in honey, fructose and glucose remain in individual units.” Malik said impure honey can cause dangerous complications, most notably the increase in blood-sugar levels, and that it is exposed to pollution by added substances that strip it of its natural characteristics. Samer Kurdi, a beekeeper, said many consumers can't tell the difference between adulterated and pure honey. He called on authorities to take the impure products off the market and punish companies that sell them.
